Makes 2

Ingredients

  • Chicken & sweet potato

  • 200g cooked orange sweet potato
  • 100g fresh ricotta
  • 1 tbs chopped chives
  • shredded barbecued chicken
  • sliced cucumber
  • Silverside & spinach

  • 120g (1/2 cup) spreadable cream cheese
  • 60g (1/4 cup) semi-dried tomatoes, chopped
  • 100g pkt lite silverside (Primo brand)
  • baby spinach leaves
  • Honey ham

  • 65g (1/4 cup) cottage cheese
  • 2 tsp chopped fresh basil
  • 100g pkt roasted shaved honey ham (Makers Choice brand)
  • avocado
  • fresh lemon juice
  • vegetarian

  • babaghanoush
  • tabouli
  • sliced Lebanese cucumber
  • sliced avocado
  • turkey & pesto

  • pesto (bought is fine)
  • shaved turkey
  • sliced Lebanese cucumber
  • snow pea sprouts

Method

  1. Chicken & sweet potato: Combine 200g cooked orange sweet potato, 100g fresh ricotta and 1 tbs chopped chives in a bowl. Spread over 2 slices of bread. Top with shredded barbecued chicken and sliced cucumber. Top with slices of bread.
  2. Silverside & spinach: Combine 120g (1/2 cup) spreadable cream cheese with 60g (1/4 cup) semi-dried tomatoes, chopped. Spread over 2 slices of bread, top with 100g pkt lite silverside (Primo brand), baby spinach leaves then slices of bread.
  3. Honey ham: Mix 65g (1/4 cup) cottage cheese with 2 tsp chopped fresh basil. Spread over 2 slices of bread, then top with 100g pkt roasted shaved honey ham (Makers Choice brand). Spread 2 slices of bread with avocado mashed with fresh lemon juice and place on top of the ham.
  4. Vegetarian: Spread 2 slices of bread with babaghanoush. Top with tabouli, sliced Lebanese cucumber, sliced avocado, and buttered slices of bread.
  5. Turkey & pesto: Spread 2 slices of bread with bought pesto. Top with shaved turkey, sliced Lebanese cucumber, snow pea sprouts and buttered slices of bread.

Notes & tips

  • Sandwiches should be kept in a sealable plastic bag in a lunch box next to a frozen bottle of water. Place lunch box in an insulated bag.
